Peanut butter cups

The other day, when I was surfing the web, I came across this blog. I was really excited to find a blog by a Christian mom and of course it helps that she has really cute kids. One of her recipes was for homemade peanut butter cups. I tried them out, and they are really good.

Doesn't this look delicious?And it's all non-dairy. Here's the recipe:

• 1 can coconut milk
• 1/4 cup plus 1 T cocoa powder
• 1/2 tsp pure vanilla extract
• sweetener to taste (I used a little stevia, but any dry sweetener will do.)

Open the coconut milk, and leave the can (or transfer to a bowl) uncovered in the fridge overnight. (Don’t shake the can before opening.) It should get very, very thick. (If it doesn’t, you’ve gotten a bad can that won’t work for the recipe. I highly recommend Thai Kitchen, or especially Thai Kitchen Organic.) Once thick, transfer to a bowl (you can opt to leave out the watery bit at the bottom of the can, if you want it even thicker) and whip in your cocoa, vanilla, and sweetener with a fork, or even beaters if you want to be fancy. (For the photos on this page, I didn’t use beaters. But I did pipe the mousse out using an icing tip.) Stored uncovered in the fridge, the mixture gets even thicker.

Friends

One of my good friends just had a birthday yesterday, which is always fun! She really likes the 1920s style dresses, so when I found this etsy shop I just had to get something with the adorable Eloise and Ramona on it. Everything she sells is so cute, I had a hard time narrowing down my choice. You should check it out! Also, her blog is fun to look at. Enjoy!

While the Power's out...

What do you do when the power's out?

I spent most of my time being crafty...

I think the best part of the whole power-outage was getting to sew while the generator ran. 

At night, I cut out lots of paper hexagons for flowers :)

Baby Shower Pictures

Hello All! I had a beautiful weekend down at my Sister's doing all sorts of fun things like eating and studying.

Also, I thought I would share with you some photos from my friend Bridgette's baby shower last week. It was a real joy to put it on for her, and it was great to see the way all the ladies supported her.  We are all excited for you and Chad!

This cake was made during the power outage using electricity from our generator. I wish I had gotten pictures of the other food that was brought. It was absolutely lovely.

The shower was book themed, so I used story titles for the menu.

Weekend

My family and I are headed away for the weekend to go see my lovely sister! I always try to pack light, but end up taking way more stuff than I should, so our car will look something like this today    ...Not really. Have a wonderful weekend,

Lots of Snow and no Power

Hello Friends!
I thought I should give you a little picture of life here the last few days. It started on Friday, around seven in the evening: it started to snow, lots and lots of snow. On Saturday morning, I woke up to the most amazing sight. The recent 10" of snow we had gotten, was joined by another 10". It was absolutely gorgeous! The snow was really wet and heavy and covered every little branch. Beautiful. Also, I woke up to no power. I was really excited, because I love power outages. However, we had close to 400 guests at camp. Hmmm. Well, everyone ended up having to go home on Saturday night because we had no way to keep everybody warm. This was really too bad, but everyone was really sweet about it and that made things a lot easier. So, anyway, the power at our house was out for the next 55 hours and I had the time of my life! I think having the power go out is one of the biggest adventures, and I love adventures. We have a wood stove, and our cooking stove is gas, so we do alright with no power. Plus, we do have a generator so we can get a shower once in a while. I have pictures from some things I did while we didn't have electricity that I'll show you all later, but right now I just hope you have a marvelous day, and are encouraged by Christ and his work on the cross for us.

Month of March

Hello all!
March is National craft month (actually) so in lieu of media I am choosing to craft. Obviously I will not abandon all media otherwise I wouldn't be making this post, but on the whole I am going to spend my spare time doing creative things. Believe me when I say I have a whole closet full of ideas, because I do!I  I invite any of you who can and want to, to join me in this endeavor. I think it will be fun. Whoever heard of crafting not being fun? Well....
